This chicken kedjenou recipe is extremely simple to make and simply delicious ! Just let it cook alone in a casserole dish... And enjoy !
This Kedjenou chicken recipe is typically Ivorian. And it's one of my favorites.
This Ivorian dish consists of vegetables (eggplant, tomatoes and onions) and stewed chicken. It can be served in various ways: with rice, semolina or attiéké. Variations based on fish or bush meat (agouti or doe) also exist, for the adventurous !
Ingredients for Kedjenou chicken:
1 whole chicken
1 large can of peeled tomatoes
2 cloves garlic
1 Eggplant
1/2 Zucchini
1 onion
Fresh Ginger (essential ingredient!)
Thyme, Bay leaf, Salt, Pepper
The Kedjenou chicken recipe :
Butter the bottom of a casserole dish halfway up.
Cut the chicken into pieces (drumstick, thigh, etc.) and put in the casserole dish.
Cut (and peel or not) the vegetables, add everything to the casserole, with the peeled tomatoes.
Chop the garlic, and add the ginger to the casserole dish.
Add the thyme and bay leaf. And, to taste, ginger (normally we add a lot, it's spicy) as well as thyme, salt and pepper.
Stir well, put on medium heat, cover and simmer for at least 45 minutes. Serve over white rice or attiéké (even better in my taste ! ).
